The caged birds in Queen Kane's palace are Gouldian Finches, an endangered native species from Australia that is considered to be the most beautiful bird in the world. It's beauty is what has led to its near extinction as hunters historically trapped them for sale as exotic pets or for their plumage.

Paris suggested the dogs couldn't track them if they walked in the river. It's true the dogs lose the scent of people when they go through rivers but it's been well established they can still track them using the disturbed riverbed and other clues.
