The 'Uncle Paul' referenced by Zu Ye when speaking to his adoptive mother Yueniang is referring to Yueniang's British lawyer husband Paul Robertson whom she eventually got married to in Xiao niang re (2008), played by Bobby Tonelli. They did not have any children of their own, thus making Zu Ye an adopted son of Yueniang and Paul.
