Urban Preservation II: The Jerky

When Alton points to an entry in a reference book to describe the origin of the word "jerky", the viewer can't see what he's pointing to but s/he can see ---on the opposite page --- a photograph of noted cookbook author, cook and TV personality, James Beard. It is unlikely that this is coincidental.

Alton makes multiple references to the meat's cell walls. Animal cells do not have cell walls, only cell membranes. Only plants, fungi, and some bacteria have cell walls.
