Brother Ralph's comment "Well, by the old shadow on the floor..." references Dean Martin's catch phrase "By the old clock on the wall I see it's time for...", that he used on his variety show to segue between acts.

At the monastery, Oscar takes sugar cubes and makes dice out of them, but when they are rolled, you can easily tell they are real actual dice, especially by the sound.
