- In Nov 2006 she trained with Irish Olympic track and field athletes during a visit to Ireland. The Team Coach said she had great potential and should consider professional sports.
- Elizabeth and her husband Actor, Robert Gordon Spencer, ran the 2006 Country Music Marathon in Nashville, TN. They crossed the finish line holding hands.
- Elizabeth has a Bachelor of Science in Nursing and works in various departments in Labor and Delivery as an RN. New York Presbyterian Cornell Hospital in NYC, and recently Bethesda Medical Center in Boynton Beach, FL. She is sought after, by celebrities because of her professionalism and extensive experience in Labor and Delivery.
