On September 14, 2017, Chapman revealed she has been diagnosed with stage II throat cancer two weeks ago after months of a nagging cough. After Chapman was diagnosed with cancer, her husband Duane 'Dog' Chapman decided to share her story with fans. The result was an A&E Special series Dog and Beth: Fight of Their Lives (2017). Duane documented her doctor's visit, how Beth and Duane shared diagnosis with their family, the gruelling 13-hour surgery to have a stage II tumour removed and also the aftermath. Chapman later went cancer-free but the disease later returned and she ended up having an emergency surgery on November 27, 2018 at Cedars-Sinai Medical Center in Los Angeles. On June 23, 2019, Chapman was admitted to Hawaii's Queen's Medical Center's where she was put into a medically-induced coma. She died early morning of June 26, 2019 of throat and lung cancer at the age of 51, after being unconscious for nearly a week.

Beth became a licensed bail bondsman at age 29 (the youngest in Colorado history). This record has since been broken by her step-daughter, Lyssa Chapman, who became a licensed bounty hunter at age 19.

Helped Duane 'Dog' Chapman raise his grandson Travis Chapman. Both she and Dog took physical custody of Travis because they didn't approve of his mother's lifestyle choices.

Had four children: son Dominic Smith (b. 1985) with her ex-boyfriend; daughter Cecily Chapman (Cecily Barmore Chapman; b. 1993) with her ex-husband Keith A. Barmore; daughter Bonnie Jo Chapman (Bonnie Joanne Chapman; b. 1998) and son Garry Chapman (b. 2000) with her husband (now widower) Duane 'Dog' Chapman.
