- Born in Essex, Spencer grew up in Chigwell, and first realised he wanted to be a chef when he was 15 after completing a two-week work experience at The Ritz under John Williams. From that point, he knew it was the career he wanted to pursue.
As well as being the Head Chef of The Ritz, he has accomplished a great amount so far in his young career. Appearing on the Great British Menu in 2022 he became the Champion of Champions. He won the Roux Scholarship in 2019, earned the Master of Culinary Arts and was on the Acorn 30 Under 30 list.
Spencer left his role as head chef of The Ritz in 2023 to work alongside Jason Atherton at his restaurant "Row on 45" in Dubai. In 2024 it was announced he would be working with Jason Atherton as the head chef of Jason's new restaurant "Row on 5" opening in London's Saville Row.

- Spencer took the crown of Roux Scholar 2019 at the age of 26. It was the first time he had entered the competition. He chose to do his placement at Restaurant Frantzén in Stockholm.
