Eunice is godmother to Angelina Jolie and Brad Pitt's eldest child Shiloh Jolie-Pitt.

While working as a stunt double on The Beach in the scene when Richard Françoise and Étienne reach the large waterfall Eunice was the stunt double to take over for Françoise who then runs of the cliff edge and into the waterfall below. If Eunice had not ran fast enough and jump out far enough she would have hit the rocks below just under the water and been injured or killed.

She performs regularly as Angelina Jolie's stunt-double.

Eunice was working at McDonald's before entering the Gladiators show.

She is mentioned frequently throughout the film Polite Society (2023) as the idol of the lead character Ria and Eunice has a voice cameo at the end of the film.

She is trained in Boxing, Karate, Jiujitsu and Kickboxing.
