He was a lawyer before getting into film production.

Turned down the chance to produce Once Upon a Time in America (1984). He read the script and wrote a long letter to Sergio Leone listing what he felt were some of the movie's crucial flaws: the film was too long (it would have run for five hours and the American distributors would cut it down to two); and Noodles was too negative for the American public (in the words of Grimaldi, "he rapes a woman and kills people without reason!"). Grimaldi demanded that either the script be redone or he would not produce it. Since none of those were made, he passed on the opportunity to produce it.

In 1961, Alberto Grimaldi founded Produzioni Europee Associati (PEA), in Rome, Italy, that became known for a number of low budget action movies in European co-productions with Spain and West Germany. The company remained active until the early 1980s, even through the decline of its films distribution to the American market.
